This week the scale finally moved in the right direction. Hopefully I have finally managed to break through the plateau.
Whole food plant based is a challenge, some days its super easy, other days it is not. I will admit, I am thoroughly enjoying being able to eat fruit again. Tomorrow I’ll go and get a few peaches and perhaps attempt peach sorbet. I’m in love with the Mango and berry sorbet I make. I’ll take pics over the weekend and share it.
My pasta salad I made last week was delicious. I did add some quinoa to the salad so it had a few more grains. It consisted of the following:
Finely chopped red onion, sweet peppers, chopped tomato, corn, and rotini pasta. I added quinoa. I made a vinaigrette dressing with red wine vinegar, grey poupon mustard, garlic, salt and pepper. It was delicious over the pasta salad. I’m going to try a salad with farrow instead of pasta this weekend. Look for a new recipe next week.
