I hopped on the scale this morning and it is finally moving in the right direction. I know everybody (including myself) says don’t watch the scale, it is all about inches, etc. But when BMI is based on weight and height it is easier said than done.
I have around 6lbs to go to have lost 100lbs. This was almost 6 yrs ago when I started the journey to lose weight. I had a few years of back and forth, but the intention in October 2014 was to get to my goal.
Whole food plant based gets a little easier each day. This week meals have been a little simpler. I made a farro salad which could be used with rice paper wrap or as a salad. I’ve had both and they were both delicious. I’ve also made a strawberry vinaigrette dressing which was totally delish. Another meal was a 10 bean ( beans, lentils, etc) curry which I had with quinoa, corn tortillas and this weekend it’ll be in a rice wrap I think.
