I have been promising to post a sample of my menu and meals.
It is your typical 3 meals and 2 snacks, just in much smaller quantities.
Breakfast –
- Oatmeal with berries
- Toast with Avocado / Peanut butter
Snack
- Fruit (Banana, 1/2 apple, 1/2 cup of berries)
Lunch
- Something with Beans / chickpeas and veggies or salad
- I usually do something like a burrito bowl. I use salsa as a dressing or make an avocado dressing
Snack
- Fruit / Hummus / Vegetables
Dinner
- Whole grain with vegetables
- Wholegrain pasta with onions, tomato, mushrooms
- South western farro pilaf
- Soup with wholegrain toast
I typically consume around 800 – 1,200 calories a day. I don’t count calories as one ends top fixating on numbers and not on nutrition. The goal is to eat nutrient dense food. Anything whole grain typically fits this.
I find one slice of Ezekiel bread with peanut butter keeps me more than satisfied for a few hours. The goal is to drink around 64 oz of water daily. I quite often have a problem with this, but am working on that. The more water consumed, the better.
