I found a recipe for spicy lentil soup. The original calls for 1 cup of cooked lentils, I prefer to do bulk cooking and freeze it so that I always have emergency food available. This is my recipe for the soup.
Spicy Lentil Soup
- 1/2 chopped onion
- 1 chopped red bell pepper
- 3 cloves garlic
- 1 inch fresh ginger grated
- 1 packet lentils (I used green) (Soaked overnight)
- 1 packet frozen corn
- 2 tablespoons of roasted red peppers
- 2 tablespoons chili powder
- 1 tsp paprika
- 1 tablespoon vegetable bouillon
- 3 cups of vegetable broth.
- Sauté: garlic, ginger, onion and bell pepper. When sautéed, add the corn, lentils and seasoning. Lastly I add the broth. Stir all ingredients together then close the pot.
- I let it cook for 30 minutes in the instant pot. Let it release naturally.
- Can be served with rice, quinoa, or any whole grain. I usually do wholegrain bread.
This is so delicious and filling. I have attached a photograph of mine. It barely made it out of the pot and I was devouring it. You could add potatoes if you want it a little thicker.
