Over the past few days, I have been thinking about WFPB recipes and how I feel when I eat a strict WFPBNO diet. With WFPBNO, I have experienced the following:
- Less bloating
- Less fatigue
- Mental clarity
- Lots of energy
- Overall a feeling that I can do anything.
I wake up and feel like I can go. I don’t remember feeling this way ever. I go to bed at night and most nights I sleep soundly. When I wake up, I can pretty much just go. I’ve never been one to exercise, but I get up early and have no problem getting dressed and going to work out for about an hour.
When I don’t eat a strict diet, I feel bloated, fatigued, I cannot think, I have zero energy. I quite frankly feel lazy.
I am an absolute savory person. I will eat chips every single day given 1/4 of a chance. I love salt, but since doing WFPBNO, I realize that I don’t crave it as much as I did before. I mostly do stuff out of habit so breaking the habit is a major deal. I have noticed the seasoning in a WFPB diet really helps. Historically, “diet” food is mostly bland and blah. Think about eating a diet filled with salad and fruit, they taste great but there is no spice in it.
Since transitioning to WFPB, I have starting using more spice. I use a lot of cumin, turmeric and roasted red pepper flakes, ginger, cinnamon, garlic, etc. I have discovered I absolutely love the way food has been seasoned. It doesn’t have to be spicy, but with the right amount of seasoning, it is amazing.
Most of the meals I make start with the following:
- Onion
- Red bell pepper
- Mushrooms
- Celery
With these few ingredients and spice, one can adapt and create a ton of delicious meals. I do not like green bell pepper. I think it is OK in a salad, but not cooked in a meal.
One of my absolute fave recipes is so versatile. It is the South western farro pilaf from Forks over knives. I absolutely LOVE this meal. I often leave out the farro and add quinoa. Or I will use a sprouted grain pizza base, add mashed avocado smeared across, chopped tomatoes on top and some hot sauce.
