This has been on my mind a lot lately. I am a huge planner. A number of years ago I heard “Daily to prepare is preparing to fail”. I am not sure who said it, but I heard if from an international rugby player, Richie McCaw. Richie is one of the most amazing and brilliant rugby players to have played for the New Zealand All Blacks.

Ok, this is not a rugby lesson, so let me move on.

I have come to realize over the past few months that I am not planning sufficiently. I have been buying fruit and veggies, but not really planning and preparing meals the way I used to. So today, I am back at it again. I have cooked my fave Dal Makhani (it was absolutely delish) and tomorrow night preparing a Texmex Quinoa salad.

I found the recipe on Monkey and Me https://monkeyandmekitchenadventures.com/tex-mex-quinoa-salad/. I have never made this before, but it looks and sounds absolutely yum. I will be using black beans in place of Kidney Beans. I’ll post pics of it once I have prepared it.

Since most recipes last 4 – 5 days in the fridge, I plan on cooking 2 – 3 meals a week and trading them out. I can likely vacuum pack and freeze one of each meal to eat later in the month or so.

One thing I am trying to do is eat less processed food. I found I like Vegan cheese, I love that it melts so have made grilled cheese. I also love love love love hummus. Unfortunately most hummus has oil. When eating WFPB, one of the ingredients we absolutely avoid is oil of any kind. I have a few recipes for a hummus, but I need to roast red bell peppers for it. That will be done in the week. Though, I have to cook my chickpeas first. I will post the recipe once I’ve tried it.

Hopefully I can get back to planning and preparing.
