Slowly settling into Whole Food Plant Based diet. It really is filling and interesting. I’m actually enjoying experimenting with food and recipes. Typically I want easy, no fuss food, but this has been interesting and fun.
Yesterday I wanted Lo-mein. I love Lo-mein, but regular Lo-mein from the local Chinese place has so much crap in it. I found a recipe for it online and OMG it was YUM. I didn’t have a few of the ingredients, so had to improvise and it worked. It was so freaking good. If one serving didn’t fill me, I would have gone back for more.
My weight seems to be swinging back and forth with the same 2 – 3 lbs. It has been a month and the scale is not moving. I know switching to WFPB diet hasn’t helped, but I’m slowly getting there. I feel like I’m losing inches. I can see changes in my body, but I’m not seeing the stupid scale move. I know it is a process, but seriously a month stall. UGH.
I’m working on a 5 week meal plan. It should not be too difficult as I can usually get 3 – 4 servings out of a recipe. One of my fave things in summer is popsicles. I’ve found a few recipes that are all super easy and I so yummy.
Mango – Sorbet
- 2 cups of Frozen Mango
- 1 banana
- Juice of 1/2 lime
- Blend together till smooth and freeze in popsicle maker
Berry Popsicles – Made this by accident
- 2 cups of frozen Strawberries
- 1 cup of frozen Blue Berries
- 1/2 lemon juice
- 1/4 cup of water
- Blend together till smooth and freeze in popsicle maker
